Note to self, bringing cupcakes to a soccer game is only good when one of two things happen. They win. Unfortunately, my luck was not as favorable as hoped. I went in with the idea that it would be a win-win with the cupcakes. With a brand new flavor, how was I to face rejection? Victory cupcakes if they win. Consoling cupcakes if they lose.

It wasn’t that easy my friends.

My cupcakes got all lonely and stuff.

Luckily, the fans were cowering over the cupcakes the whole game. They were shared with them. They won the game…..the cupcake game.

Anyway, lets get to these Halloween double stuffed Oreos. I’ve always been a fan of colored icing. I’ve convinced myself that it tastes 20x better than the white stuff. Plus, there is the added benefit of all the artificial coloring. Life is good, minus getting rejected by a soccer team.

So I got to thinking. Double Stuffed Oreos are quite delicious. Chocolate cupcakes are also quite delicious. Oreos in cupcakes is naturally the next thing that comes out of the cup-oreo ideology. So I plopped them on in.

And what do you get? Well, a sweet little cupcake with an oreo peeking out.

I mean it’s not like I expected something else. Although that would have been pretty cool if I would have opened the oven door and a vanilla cupcake with a snickerdoodle cookie would have popped out. That would have been pretty wild.

Mmmm….a vanilla cupcake with a snickerdoodle on top…now that sounds good.

So, the next thing you do is whip up some frosting to top these delightful bites of glory. Next, you plop in some MORE Oreos and mix until pulverized. Personally I would NOT recommend what I did. I would definitely crush them BEFORE. Unless you want to see what flying cookie crumbs look like on your wall. It could be a new look.

My mom doesn’t think so….

Sprinkles….hehe.

Double Stuffed Peanut Butter Oreo Blizzard Cupcakes

Items Needed:

Cupcake:

  • 1 Pillsbury chocolate cake mix
  • 1 small box jello instant chocolate fudge pudding mix (3.4 ounce)
  • 1 cup sour cream
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 4 eggs
  • 2 packages double stuffed Halloween Oreos
  • Sprinkles
Icing:
  • 3 sticks softened butter
  • 2 tsp. vanilla
  • 1 bag (2lb.) powdered sugar
  • 1/4-1/2 cup milk
  • 1/2 cup cream peanut butter
Directions:
  1. Preheat oven to 350*F. Line cupcake pans with baking cups.
  2. With an electric mixer combine cake mix, sour cream, pudding mix, water and oil for 2 minutes or until smooth.
  3. Spoon into cupcake papers, about 2/3 full. (Batter will be thick!) Bake for 22-23 minutes or until toothpick inserted comes out clean.
  4. While baking, make frosting. With an electric mixer, combine softened butter, vanilla, and half of the powdered sugar. Add milk, and the rest of the powdered sugar. Mix on medium high for 3-5 minutes, until smooooth, dreamy, and creamy. Mix in peanut butter. Add 10 crushed Oreos. Mix on medium for 2-3 minutes or until incorporated and “blizzard” like.
  5. Spoon into a large Ziploc bag, snip the end, and pipe frosting onto the tops of cooled cupcakes. Roll in sprinkles and top with a half an Oreo garnish. Makes 26-28 cupcakes.

Put it all together…and what do you get?

  • Success, with frosting on top.
  • The ultimately love affair between cupcakes and Oreos.
  • A really nice way to make soccer fans happy.
  • A not so good way to “console” the losing team.

Hehehe…that’s all I can seem to do.
